It's Easter time again, and that means it's time to bring on the eggs!

Deviled eggs are a classic Easter dish, and for good reason – they're delicious! This year, why not switch things up a bit? Instead of your usual recipe, try this Easter-themed variation?

This recipe is simple to follow and results in the perfectly blushed deviled egg. Impress your friends and family with a fun, sweet + salty egg recipe that is just irresistible! 🤤 Match these deviled eggs with our recommended wine pairing and trust me, your taste buds will be jumping with joy!

Ingredients

  • 5 eggs
  • ½ tsp Dijon
  • 3 tbsp Whole eggs
  • ¼ tsp Paprika
  • ¼ tsp Curry powder (optional)
  • Salt to taste
  • 1 tsp Bacon fat
  • 1 tsp Pickle juice (or lemon juice + sugar)
  • ¼ Beetroot (20g)

Cooking Instructions

1. Hard boil your eggs (12-15min in boiling water), submerge in an ice bath, and set aside.

2. Grate roughly a ¼ of your beetroot and pour in soak in about 450ml of water and set aside to infuse.

3. Slice your eggs in half, separate the yolks from the white.

4. Filter your beetroot juice, then submerge your whites in the juice and let it sit for about 5min to stain a light pink tone. Remove and pat dry with a tissue to avoid uneven markings.

5. Grab your yolks, break it up or put through a sieve. Add your juice, and bacon fat, mix until smooth, then add your mayo, paprika, dijon, combine and adjust to taste. Then place into a piping bag with your preferred tip.

6. Pipe into the crater of the whites, sprinkle with crispy bacon bits, chives and dill pickle.

Wine Pairing

We recommend matching with a bottle of Estate Riesling or Impressionist Pinot Grigio.

The creaminess of the egg yolks and spices perfectly accompany the acidity and natural fruit sweetness of our Pinot Grigio or Riesling.
